Claims (8)

1. Способ приготовления пищевой эмульсии с пониженным содержанием окисляющего металла, содержащей масляную фазы и водную фазу, включающий стадии:
(а) обеспечения исходного материала, содержащего белок или белковый материал;
(б) удаления металла из исходного материала и
(в) использования продукта со стадии (б) для приготовления пищевой эмульсии.
2. Способ по п.1, в котором металл выбирается из группы, состоящей из меди и железа.
3. Способ по п.1, в котором белок выбирается из группы, состоящей из молочных белков, соевого белка, горохового белка и их комбинаций.
4. Способ по п.3, в котором белок является молочным белком, а исходный материал выбирается из группы, состоящей из цельного молока, сухого цельного молока, обезжиренного молока, сухого обезжиренного молока, пахты, сухой пахты, плазмы масла, сухой плазмы масла, сыворотки, сухой сыворотки, сывороточно-белкового концентрата, сывороточно-белкового изолята и казеината натрия.
5. Способ по любому из пп.1-4, в котором металл удаляется из исходного материала фильтрацией.
6. Пищевая эмульсия, полученная способом по любому из пп.1-5.
7. Пищевой продукт, содержащий пищевую эмульсию по п.6.
8. Пищевой продукт по п.7, выбираемый из группы, состоящей из молока, сыра, йогурта, сливок, спредов, майонеза, заправок, соусов, мороженого и продуктов, альтернативных молочным продуктам.
