Abstract

Integralnu testeninu od spelte obogaćenu susamom karakteriše značajano veći sadržaj magnezijuma, 42% više, i kalcijuma, 62% više, u odnosu na integralnu testeninu od spelte. Integralna testenina od spelte obogaćena je susamom, minimum 10% susamovog brašna dodato je kao zamena za deo integralnog brašna od spelte. Dodatak susamovog brašna poboljšava mineralni sastav, menja nutritivnu vrednost testenine i ima dobre senzorske osobine u odnosu na integralnu testeninu od spelte.
