Wholemeal spelt pasta enriched with sesame seed flour is characterized by significantly highcr content of magnesium and calcium, 42% and 62% higher, in comparison to the regular wholemeal spelt pasta, respectively. Wholemeal spelt pasta formulation is enriched with sesame seed flour, minimal 10% of wholemeal spelt flour is replaced with sesame seed flour. Addition of sesame seed flour improves mineral composition, changes nutritive value and provides good sensory properties in comparison to the regular wholemeal spelt pasta.
