Abstract

Inventia se refera la un procedeu de obtinere a cazeinatului de calciu, produs cu un continut proteic ridicat si o mare valoare biologica. Procedeul care face obiectul inventiei utilizeaza cazeina acida proaspata si o suspensie de hidroxid de calciu de 4,8g/l, adaugat în portiuni la temperatura ambianta, pîna la atingerea unui pH de 6,5. Se obtine în acest mod o suspensie de cazeinat de calciu care este apoi uscata prin pulverizare. Cazeinatul de calciu poate fi utilizat în diferite subramuri ale industriei alimentare ca aport de proteine sau pentru proprietatile sale emulgatoare si stabilizatoare (alimente pentru sugari, dietetice speciale si geriatrice, în iaurt si brînzeturi topite în biscuiti si paste fainoase etc.).
