Abstract

Przedmiotem zgłoszenia jest sposób wytwarzania ugotowanego ryżu. Przy wytwarzaniu gotowanego ryżu, do wody w ilości od 0,9 do 2,5 kg na 1 kg masy suchego ryżu, korzystnie od 1,5 do 2 kg wody na 1 kg masy suchego ryżu, dodawany jest kwas hialuronowy w ilości od 0,1 do 10 g na 1 kg masy suchego ryżu, korzystnie w ilości od 0,5 do 2 g kwasu hialuronowego na 1 kg masy suchego ryżu, a następnie suchy lub opłukany wcześniej w wodzie ryż umieszczany jest w naczyniu o odpowiedniej pojemności nadającym się do obróbki cieplnej i zalewany przygotowanym roztworem kwasu hialuronowego, po czym całość jest przykrywana pokrywką i poddawana obróbce termicznej w temperaturze nie niższej niż 80°C, korzystnie 100°C, do momentu wchłonięcia przez ryż całości wody z dodatkiem kwasu hialuronowego, ale przed momentem przywarcia ryżu do dna naczynia oraz przegrzania ryżu i kwasu hialuronowego, korzystnie w czasie nie krótszym niż 15 min, potrzebnym do ugotowania ryżu, a po ugotowaniu ryż przeznaczany jest do dalszych etapów produkcji.The subject of the application is a method for producing cooked rice.
