Przedmiotem wynalazku jest sposób prowadzenia fermentacji alkoholowej wysokocukrowej brzeczki miodowej charakteryzujący się tym, że do nastawu brzeczki miodowej wprowadza się szczep Scm drożdży Saccharomyces cerevisiae zdeponowany w Kolekcji Kultur Drobnoustrojów Przemysłowych IBPRS pod numerem KKP 2052 p i prowadzi się fermentację brzeczki, korzystnie przez 30 dni, do otrzymania młodego miodu pitnego. Wynalazek dotyczy również suchego preparatu tych drożdży.
