Abstract
Przedmiotem wynalazku jest produkt spożywczy z ryb, zwłaszcza z łososia oraz sposób jego wytwarzania, który polega na tym, że z łososia całkowicie usuwa się żeberka, płaty brzuszne i błonki. W kolejnej fazie po pocięciu produktu na płaty o grubości od 1,5 mm do 3 mm ryba przyprawiona jest wcześniej przygotowaną mieszaniną warzywno - ziołową i zapakowana w opakowanie hermetyczne, po czym następuje faza mrożenia w temp. od -18°C do -10°C przez okres ok. 2 miesięcy.The subject of the invention is a food product from fish, especially salmon, and a method of its production, which consists in the fact that the ribs, abdominal lobes and membranes are completely removed from the salmon. The fish after pre-cutting into slices is subjected to the process of seasoning with a mixture consisting of herbal and vegetable spices, and then stored in a cold store at 0 ° C to 10 ° C. In the next phase, after cutting the product into slices with a thickness of 1.5 mm to 3 mm, the fish is seasoned with a previously prepared vegetable and herbal mixture and packed in an airtight container, followed by a freezing phase at -18 ° C to -10 ° C for a period of about 2 months.
