Break apart with the shells and put them in the boiling water. The solid egg mass treated in this way is drained from the water and processed as desired, preferably mechanically, adding to the dry matter possibly additional nutrients, such as flour, e.g. potato flour, barley flour, rye flour, other flour, bran, etc. of broken eggs, hot water or steam is used to cut down the undecomposed protein and chase away the waste products, especially hydrogen sulphide.
