Description

Ukwaszanie mleka i dojrzewanie skrzepu trwa 3 do 5 godzin w temperaturze 33 do 35°C. Dojrzaly skrzep rozdrabnia sie i dogrzewa w ciagu 0,5 godziny do temperatury 38—40°C, stale mieszajac. Serwatke odczerpuje sie, a pozostala mase twarogowa prasuje sie, uzyskujac twaróg spozywczy. Po ukwaszeniu mleko to pasteryzuje sie, zageszcza do zawartosci 15—30% wagowych suchej substancji i uzyskany koncentrat suszy sie do zawartosci 90—97% wagowych suchej substancji. Uzyskany proszek dodaje sie w ilosci 2 do 5% wagowych do reszty spasteryzowanego mleka przerobowego. Proszek, przed dodaniem do reszty mleka przerobo¬ wego moze byc zregenerowany do postaci plynnej o zawartosci 10—25%wagowyeh suchej substancji. Powstaly skrzep poddaje sie dogrzewaniu i dojrzewaniu a nastepnie oddziela sie serwatke i uzyskuje twaróg.Zastosowanie jako koagulatora wysokoukwaszonego mleka w proszku eliminuje sie koniecznosc dlugo¬ trwalego ukwaszania mleka przerobowego w zakladach produkujacych twaróg. Pozwala to na uzyskanie gotowe¬ go produktu o znacznie wyzszej jakosci mikrobiologicznej. Zwieksza to jego trwalosc i podnosP wlasciwosci dietetyczne. Sposób wytwarzania twarogu spozywczego wedlug wynalazku ilustruja blizej ponizsze przyklady realizacji.2 138685 Przyklad I. Pierwsza porcje 100 litrów mleka przerobowego pasteryzuje sie w temperaturze 72°C przez 15sekund, schladza sie i zaprawia 5 litrami zakwasu Lactobacillus acidophilus. Ukwaszanie prowadzi sie w temperaturze 44°C w czasie 16-24 godzin, do osiagniecia kwasowosci pH 3,2 - 4,0 (60-120°SH). Nastepnie chlodzi sie je i w celu wprowadzenia zywej mikroflory kwaszacej w postaci mezofilnych bakterii kwasu mlekowego, dodaje sie 20 litrów zakwasu maslanego. Do tak przygotowanej drugiej porcji mleka, dodaje sie ukwaszona i sproszkowana pierwsza porcje. Powoduje to ukwaszenie calosci do kwasowosci pH 4,6 - 4,8 i koagulacje bialka. Uzyskany skrzep poddaje sie dogrzewaniu do temperatury 28-55°C i dojrzewaniu wciagu 0,5-3 godzin. Wydzielona serwatke oddziela sie a pozostala mase poddaje sie prasowaniu do uzyskania w twaro¬ gu zawartosci co najmniej 20% wagowych suchej substancji.Przyklad II. Pierwsza porcje 100 litrów mleka ukwasza sie, zageszcza i suszy jak w przykladzie I.Przed dodaniem jej do drugiej porcji 400 litrów mleka, przygotowanego jak w przykladzie I, proszek z porcji pierwszej poddaje sie regeneracji do postaci plynnej. W tym celu rozpuszcza sie go w 40 litrach wody i po spasteryzowaniu w temperaturze 72°C w ciagu 15 sekund, dodaje sie go do drugiej porcji mleka. Pierwsza porcje mleka w ilosci 50 litrów miesza sie z 50 litrami serwatki. Calosc paste¬ ryzuje sie i ukwasza jak w przykladzie I. Po ukwaszeniuzageszcza sie 10-krotnie. Uzyskany koncentrat dodaje sie do drugiej porcji 400 litrów mleka, przygotowanego jsk w przykladzie I i dalsza obróbke uzyskanego skrzepu prowadzi sie tam podanym sposobem.Zastrzezenie patentowe 1. Naklad 100 cgz Cena 130 zl PLThe subject of the invention is a method for the production of food curd with increased microbiological quality and durability. There is a known method for the production of food curd, in which the milk is acidified with the help of mesophilic lactic acid bacteria to an acidity of pH 4.6 - 4.8. The fermentation of the milk and the maturation of the curd takes 3 to 5 hours at a temperature of 33 to 35 ° C. The mature curd is ground and heated in 0.5 hour to 38-40 ° C, with constant stirring. The whey is drained and the remaining curd mass is pressed into edible curd. A method of acidifying milk with mineral or organic acids and further treatment as in the previous method is also known. Known methods of producing cottage cheese cause the multiplication of microflora, including the microflora which is technologically harmful and even harmful to health. The method of producing food curd according to the invention consists in strong acidification of a part of the processing milk with thermophilic lactic acid bacteria to acidity of pH 3.2 - 4.0. After acidification, the milk is pasteurized, concentrated to a content of 15-30% by weight of dry substance, and the resulting concentrate is dried to a content of 90-97% by weight of dry substance. The resulting powder is added in an amount of 2 to 5% by weight to the rest of the pasteurized process milk. The powder, before being added to the rest of the processing milk, may be regenerated to a liquid form containing 10-25% by weight of dry matter. The first, acidified part of the milk may also be mixed with whey in a ratio of 1: 4 to 4: 1 before it is acidified. In this case, after it has been acidified, it is concentrated 5 to 10 times. To the rest of the processing milk, of the living acidic microflora, after pasteurization and before combining with the first, highly acidified part of the ground, mesophilic lactic acid bacteria leaven is added in an amount from 1 to 10% by weight. The combination of the second part of milk with the first one causes its acidification to a pH of 4.6 - 4.8 and protein coagulation. The resulting curd is subjected to heating and maturation, and then the whey is separated and the curd is obtained. The use of highly acidified milk powder as a coagulator eliminates the need for long-term acidification of the processing milk in curd plants. This allows to obtain a finished product of much higher microbiological quality. This increases its durability and improves its dietary properties. The method for producing the food curd according to the invention is illustrated by the following examples of implementation.2 138685 Example I. The first portion of 100 liters of processing milk is pasteurized at 72 ° C for 15 seconds, cooled and seasoned with 5 liters of Lactobacillus acidophilus. The acidification is carried out at 44 ° C for 16-24 hours until the acidity is pH 3.2-4.0 (60-120 ° SH). After acidification, the milk is pasteurized at 72 ° C for 15 seconds and concentrated to 15-30% by weight of dry substance. The condensed milk is spray-dried at an inlet air temperature of 160-180 ° C and an outlet air temperature of 70-100 ° C, to a dry substance content of 90-97% by weight. After drying, about 10 kg of acidic milk powder are obtained. A second portion of 400 liters of processing milk is pasteurized at 72 ° C for 15 seconds. Then they are cooled and, in order to introduce the living acidic microflora in the form of mesophilic lactic acid bacteria, 20 liters of sourdough are added. butter. To the second portion of milk prepared in this way, add sour and powdered first portion. This results in acidification of the whole to an acidity of pH 4.6 - 4.8 and protein coagulation. The obtained curd is subjected to heating up to the temperature of 28-55 ° C and maturation for 0.5-3 hours. The separated whey is separated and the remaining mass is pressed until the curd contains at least 20% by weight of dry substance. Example II. The first portion of 100 liters of milk is acidified, thickened and dried as in example I. Before adding it to the second portion of 400 liters of milk prepared as in example I, the powder from the first portion is regenerated into a liquid form. For this purpose, it is dissolved in 40 liters of water and, after pasteurization at 72 ° C for 15 seconds, it is added to the second portion of milk. The obtained curd is further processed as in Example I., Ex. The first portion of milk in the amount of 50 liters is mixed with 50 liters of whey. The whole is pasteurized and acidified as in example 1. After acidification it thickens 10 times. The resulting concentrate is added to the second batch of 400 liters of milk prepared in Example 1, and further processing of the curd obtained therein is carried out in the manner described therein.
