Abstract

The present utility model concerns a process for producing a food powder. Particularly, the utility model pertains to a process for producing a gamma-aminobutyric acid rich orange sweet potato powder comprising the steps of washing orange sweet potatoes; sanitizing the washed orange sweet potatoes; peeling the sanitized orange sweet potatoes; slicing the peeled orange sweet potatoes; drying the sliced orange sweet potatoes in a forced draft dryer at a temperature of 60 to 80øC for 4 to 8 hours; grinding the dried orange sweet potatoes to form a powder; and packing the powder. The obtained powder has a gammaaminobutyric acid content of 100 to 200 mg/100g of powder and can be used as a functional additive in food and beverage applications.
