Abstract

The utility model focused on the utilization and product acceptability of cookies made from squash (Cucurbita maxima), sweet potato flour (Ipomea batatas) and carrots (Daucus carota). It dealt with four parts - the production of grated carrots (Daucus carota), grated squash (Cucurbita maxima), sweet potato (Ipomea batatas) flour and the vegetable cookies. The process of producing the vegetabl cookies was initiated by measuring necessary ingredients such as sugar, grated squash (Cucurbita maxima), margarine, cheese, cornstarch and carrots (Daucus carota). This was followed by creaming the butter, sugar and egg with the gradual addition of sweet potato (Ipomea batatas) flour and cornstarch then blend the mixture. Upon reaching desired consistency, grated squash (Cucurbita maxima) and grated carrots (Daucus carota) were added. Once the admixture is dry enough and reached its appropriate consistency, it was transferred for molding. The molded cookies were placed in a greased cooking sheet ready for baking for about 20 minutes or until it reaches golden brown color. Lastly, the vegetable products were packed.
