Abstract

A process of making jute ice cream comprising the steps of gathering fresh jute leaves; cleaning the leaves thoroughly with clean water; steaming for 5 minutes; blending; measuring the ingredients such as blended jute leaves, vanilla, coconut milk, evaporated milk, sugar, salt, cornstarch and powdered milk; mixing the dry ingredients such as sugar, salt, cornstarch and powdered milk and liquid ingredients such as blended jute leaves, vanilla, coconut milk, evaporated milk in a bowl; boiling the mixture for about 15 minutes and continuously stirring; adding the blended jute leaves into the boiling mixture with continuous stirring; cooking the mixture until done; cooling the mixture for about 15 to 20 minutes and beat until foamy; refrigerating the mixture about 1 hour; beating the mixture again until it thickens; filling and packaging the cooked ice cream into a container; and covering and freezing the said filled ice cream to harden.
