Abstract

Uncut food pieces are fed via the chute 24 into the rotating impeller 32 so that the uncut pieces are forced outwardly against the blades 56 of the cutter head 50 fixed about the impeller, the cut pieces falling into the exit opening at the bottom of the cutter casing 4. Cryogenic liquid such as liquid CO2 is injected via injectors 58, 59 into the space 54 for the cut pieces. The cutter head 50 separates the space 52 for the uncut pieces from the space 54 for the cut pieces. The cut pieces, heated by the cutting process, are quickly cooled by the injected cryogenic.
