Abstract

Between the preparation of dough and its final use for baking, the dough is portioned, shaped and possibly also deep-frozen until required. The portioned and shaped dough is placed on a plate or panel made up of three layers. The upper most sheet is a flat separation layer of baking foil which is bonded to the peaks of a sheet of corrugated paper. The bonding agent is a water-soluble adhesive which loses its adhesive power at or below approximately 0 degrees C. The lower face of the corrugated paper is attached to a flat layer of any suitable material. The panel is sized to fit within a standard baking tray or form.
