Abstract

A flavouring for altering, reinforcing or supplementing the taste and/or aroma of foods or luxury goods is prepd. by heating fructose and proline in a polar solvent, and opt. removing the solvent. A sweet, creamy and buttery flavour is conferred on the food. The flavour is not affected by later treatment of the food, e.g. cooking or sterilisation. Fructose is easily available and relatively cheap. The solvent is pref. suitable for human consumption, e.g. ethanol or water. The ratio of fructose:proline is 1:2-15:1 (1-8:1). The amt. of solvent may be 0.1-40x wt. of the fructose+proline. The fructose may be pure, or may be used as a syrup contg. a small amt. of glucose. The amino-acid component contains >=50% proline, and may contain =50% lysine, =35% alanine, =25% glycine and =25% histidine. Reaction is pref. under reflux, at 65-160 degrees C (75-140 degrees C) for 0.3-10 hrs.
