Abstract

Potatoes and similar vegetables are steam peeled by introducing them into a vessel under steam pressure in portion through locks. A star wheel conveys the portions through the vessel and discharges them into another lock. A sudden pressure relief in this lock causes the peels to burst off by internal pressure. The small portions provide a better access to each individual tuber so that the peeling action is more uniform. The locks can be kept small enough to reduce the steam losses to a minimum.
