Abstract
1507404 Treating tomatoes B VRESPA 22 March 1976 11447/76 Heading A2D A method of treating tomatoes comprises (a) sorting, washing and drying tomatoes, (b) deep-freezing the tomatoes at about -40‹C, (c) immersing the tomatoes in water at just above 0‹C and rubbing the surface of the tomatoes to effect peeling thereof, (d) separating the whole peeled tomatoes immersed in a mash of tomatoes of the same variety as the whole tomatoes in portions, (e) deep-freezing the tomatoes at -40‹C followed by (f) packaging and storing the tomatoes immersed in the mash in refrigerating rooms. The tomato mash may be provided by squeezing tomatoes rejected from the initial sorting or films and skins with pulpy residues derived from the peeling stage, seeds and other solid matter being rejected from said mash. The treated deep frozen tomatoes may be packaged in a container which is partitioned into separable unitary weight groups.
