Abstract
A lactic acid bacteria-fermented food prod. (I) is prepd. from a cereal germ by inoculating a culture medium contg. a water extract of a cereal germ as a main ingredient with lactic acid bacteria, and then cultivating the lactic acid bacteria to produce (I). The bacteria may be Lactobacillus bulgaricus, Lactobacillus acidophilus, Streptococcus lactis or Streptococcus thermophilus. (I) is free from the poor palatability of cereal germs due to bad smell, taste and susceptibility to storage.
