Abstract

Deep freezing liquid or semi-liquid suspensions or extracts of foodstuffs.. Such as apple pure, and particularly spinach etc., by bringing droplets of the suspension in the immediate vicinity of or into direct contact with drops of liquid nitrogen freely suspended in a gaseous atmosphere. The process can be carried out in a vertical cylindrical vessel through which the droplets of foodstuff suspension, preferably an aqueous suspension at 5 degrees C, and of liquid nitrogen may pass co-currently in such a way that the liquid nitrogen drops form a concentric curtain round the drops of suspension, or may be injected in counter-current flow. An auxiliary stream of gas is directed along the walls of the freezing vessel to prevent freezing of the suspension thereon and to assist in keeping the droplets in suspension for a longer period. The frozen product is a free flowing powder which can be removed, e.g. via a star-valve, and packed by standard machines. Higher production rates of better quality material are obtained because of the high freezing rate and difficulties associated with pre-packing before freezing are eliminated. The cost reduction is sufficient to justify the use of liquid nitrogen.
