Description
Werkwijze voor het vervaardigen van een ovengeschikt vleesproduct zoals een schnitzel, een dergelijk ovengeschikt vleesproduct, en coating daarvoorMethod for manufacturing an oven-suitable meat product such as a schnitzel, such an oven-suitable meat product, and coating therefor
The present invention relates to a method for manufacturing an oven-suitable meat product, such as in particular an oven-suitable schnitzel.
A large part of the meat products consumed in practice, including cutlets, are pre-treated industrially and then delivered to consumers via transport and stores. Pre-treatment involves the provision of a (raw) meat product on which, inter alia in the case of cutlets, a breadcrumb layer is applied, after which in practice it is often pre-cooked in a frying process. Often the product is subsequently frozen or possibly cooled for transport to stores and final delivery to the consumer. The consumer then performs the final processing on the meat product by, for example, chopping it off in a pan.
A problem with current meat products, and in particular cutlets, is that they absorb relatively much fat in the preparation process when frying in oil or butter. Although oven-suitable meat products are available on their own, these are meat products that do not come close to the more traditionally prepared oil and / or butter meat products in terms of taste.
The present invention has for its object to provide a method for manufacturing an oven-suitable meat product with which the above-mentioned disadvantages can be eliminated or at least reduced.
This object is achieved with the method according to the invention for manufacturing an oven-suitable meat product, such as a schnitzel, the method comprising the steps of: providing a meat product with desired shape and dimensions; proteinating and breading the meat product such that the meat product is provided with a breading layer; applying an additional protective coating to the breaded meat product; and preheating the breaded meat product and the additional protective coating in an oven, such that an oven suitable meat product is obtained.
In the method according to the invention, a meat product, such as a schnitzel, is provided in the conventional manner with the desired shape dimensions, for example from a butcher shop. The meat product herein preferably relates to a schnitzel of, for example, chicken meat, pork, beef or another starting material. After providing such a (crude) meat product, a breading layer is applied to it, for example in a protein process and / or breading process.
A breadcrumb layer is hereby applied to the surface of the meat product. If desired, excess liquid is then removed from the meat product.
According to the invention, the product is then provided with a protective coating, with which the breaded meat product is made suitable for finishing or baking in an oven. This already results in a first reduction in the intake of fats in comparison with conventional deep-fried products. The protective coating thus results in an oven-suitable meat product with a relatively low fat content in comparison with conventional meat products. By providing a furnace-suitable meat product to the consumer, in the final preparation by the consumer, a second reduction in fat intake is preferably achieved.
The fat content in weight percentage of the total weight of the meat product according to the invention is lower than 10%. This already provides a relevant reduction in fat intake compared to conventional meat products, in particular cutlets. Preferably the fat content is even lower than 9% by weight, and more preferably lower than 8% by weight. It has been found that such lower weight percentages for the fat content of the meat product significantly reduce fat consumption by consumers. This advantage outweighs the execution of an additional processing step aimed at applying a protective coating during the production process. It has further been found that with a lower fat content an oven-suitable meat product can nevertheless be provided with the aid of this additional coating step. Furthermore, the taste of the finally obtained meat product according to the invention appears to be at least comparable with conventionally prepared meat products, however, the meat product according to the invention thereby has a significantly lower fat content.
Preferably, the additional protective coating is applied to the breaded meat product in an additional coating step prior to pre-cooking thereof. It has been found that applying the separate coating prior to pre-cooking results in an end product with a lower fat content.
In an advantageous preferred embodiment according to the present invention, the protective coating is provided with a composition which comprises with respect to the total weight of the protective coating to be applied: at least 85% oil; at least 10% water; and a mixture comprising at most 2% of the total weight of the coating of egg yolk to be applied, preferably in powder form, and at most 2% of the total weight of the coating of additives to be applied.
By providing a specific composition of the protective coating comprising oil, water, egg yolk and a number of additives, a protective effect of the additionally applied coating is provided, whereby fat absorption is further reduced and the flavor of the meat product is further preserved.
Preferably, the additives comprise at most 1.0% by weight of the total weight of the coating to be applied to roasted sugars, in particular caramel. The protective effect of the protective coating is further enhanced by the use of roasted sugars. Furthermore, the additives preferably comprise at most 1.0% by weight of the total weight of the total aroma coating to be applied. The aroma can be adjusted to the wishes of the consumer if desired.
In an advantageous preferred embodiment according to the invention, in the preparation of the protective coating, an emulsion is prepared from the mixture with the water, after which the oil, preferably vegetable oil, is added to the emulsion until the desired protective coating to be applied in an additional coating step for the meat product.
By forming an emulsion, the components of the composition are distributed as optimally as possible and a homogeneous combination is formed in the form of the emulsion, after which the (vegetable) oil is supplied. This results in a homogeneous coating that can then be applied to the meat product. An additional advantage is that the preparation of the coating can be effectively carried out in or near the production process, and preferably even forms part of it.
In a presently preferred embodiment, a mixture with important components of the composition is supplied, after which it is prepared with water to the emulsion in or near the production process. The vegetable oil is preferably supplied in or near the production process, so that the coating can be manufactured as required. In addition, this offers the possibility to adjust the coating to the specific meat product by adjusting the type of (vegetable) oil.
The oven-suitable meat product with protective coating is preferably frozen for transport to wholesalers and stores, after which delivery can take place to, for example, the consumer. Hereby the shelf life of the meat product manufactured according to the method of the invention is extended. It has been found that by applying the protective coating the shelf life of the meat product is at least equivalent to that of conventional meat products.
In the presently preferred embodiment for the coating, the components thereof, with the exception of the vegetable oil and the water, are supplied as a mixture. This mixture comprises by weight% of the total weight of the mixture preferably: 60-80% by weight, preferably approximately 70% by weight egg yolk powder; 15-20% by weight, preferably about 18.5% by weight of caramel powder; and 10-15% by weight, preferably about 11.5% by weight of lecithin.
It has been found that a mixture with the above-mentioned composition can be supplied in an effective manner and can subsequently be brought to the desired protective coating by adding water and vegetable oil. The resulting coating can then be applied to a breaded meat product.
The invention furthermore relates to an oven-suitable meat product, comprising: a piece of meat with desired shape and dimensions; a breading layer applied to the piece of meat by egg coating and breading; and the protective coating applied thereto prior to pre-cooking the meat product with a breading layer such that the oven-suitable meat product is obtained.
The oven-suitable meat product provides the same advantages and effects as described above for the method of manufacturing such an oven-suitable meat product. In particular, the oven-suitable meat product provides a meat product, in particular a schnitzel, with a low fat content. The meat product is herein preferably provided with an additional coating in an additional process step, as is explained in more detail.
The invention furthermore also relates to a coating for a meat product in which the protective coating is provided with a composition comprising, with respect to the total weight of the protective coating to be applied: at least 85% oil; at least 10% water; and a mixture comprising at most 2% of the total weight of the coating of egg yolk to be applied, preferably in powder form, and at most 2% of the total weight of the coating of additives to be applied.
The coating provides the same advantages and effects as described above for the method and / or the oven-suitable meat product. In particular, application of the coating as an additional protective coating, preferably applied in a separate process step, results in an oven-suitable meat product with a significantly lower fat content, preferably lower than 10% by weight of the total weight of the meat product, in particular of a schnitzel.
Preferably, the additives comprise at most 1.0% by weight of the total weight of the coating to be applied to caramel, thereby further enhancing the protective effect of the coating. Also preferably, the additives comprise at most 1.0% by weight of the total weight of the coating to be applied to flavor to further enhance the taste of the meat product.
In an advantageous preferred embodiment according to the present invention, the mixture comprises with respect to the total weight of the mixture: 60 - 80% by weight, more preferably approximately 70% by weight egg yolk powder; 15-20% by weight, more preferably about 18.5% by weight of caramel powder; and 10-15% by weight, more preferably about 11.5% by weight of lecithin.
By providing the mixture, as part of the coating, with the aforementioned composition, an effective protective coating is provided which can be applied to the breaded meat product in an additional process step. This further reduces fat absorption by the meat product, while at the same time preserving the taste as optimally as possible. An additional advantage of this specific mixture is that it can be mixed in advance and can be transported to the production process. In or near the production process, the mixture can be made with the aid of water to an emulsion, to which the desired type and / or amount of vegetable oil is further added on site. In this way, the coating can be manufactured as required, thereby avoiding the preparation of a surplus of coating. This also ensures that the type and / or specific amount of vegetable oil can be adjusted to the specific meat product and the specific need. In this way a cost-effective manufacturing process is realized.
Verdere voordelen, kenmerken en details van de uitvinding worden toegelicht aan de hand van voorkeursuitvoeringsvormen daarvan, waarbij wordt verwezen naar de bijgevoegde tekeningen, waarin toont:Further advantages, features and details of the invention are elucidated on the basis of preferred embodiments thereof, wherein reference is made to the accompanying drawings, in which:

It will be clear that other shapes and dimensions are also possible for a schnitzel according to the present invention.
Bereidingstap 18 vindt plaats in of nabij coatingstap 14. Vervolgens wordt de gecoate schnitzel 26 voorgegaard. Optioneel kan voorgegaarde schnitzel 30 wordt ingevroren tot ingevroren schnitzel 34.Prepared schnitzel 8 is then breaded, resulting in a breaded schnitzel 12. To this, coating 16 is applied in additional coating step 14. To this end, composition 16 is prepared in preparation process 18 from vegetable oil 24, with water 22 and a mixture 20. Mixture 20 consists of 69.8% by weight egg yolk powder, 18.6% by weight caramel powder and 11.6% by weight lecithin with respect to the total weight of mixture 20. In the example, mixture 20 with water 22 is formed into an emulsion to which vegetable oil 24 is added to to arrive at coating composition 16. Preparation step 18 takes place in or near coating step 14. Subsequently, the coated schnitzel 26 is precooked. Optionally, pre-cooked schnitzel 30 can be frozen to frozen schnitzel 34.
The resulting oven-suitable schnitzel 30, 34 is baked in an oven in preparation step 36, resulting in schnitzel 38, with a low fat content of at most 10% by weight of the total weight of the schnitzel.
