Abstract
Las propiedades de la carne son evaluadas utilizando un explorador de absorcion de rayos X de energia doble no invasivo; se producen 1 dos imagenes o disposiciones de los valores representativos de las intensidades de los rayos X en dos niveles de energia; estos son luego procesados para determinar propiedades tales como deficiencia de sustancias quimicas, porcentaje de grasa, peso, presencia de contaminantes y lo tierno de la came explorada 2-5; la evaluacion de la carne incluye un paso de correccion para superar los efectos instrumentales no deseados.
