Abstract

La presente invencion se refiere a un sistema enzimático comprendido de la glucosa oxidasa y una catalasa de la misma fuente o de diferentes fuentes, para que conduzca a la conversion completa de la glucosa al ácido gluconico a una concentracion de la glucosa mayor que 25% (p/p) ds. El ácido gluconico resultante, el cual está esencialmente libre de impurezas asociadas normalmente con el proceso de fermentacion, es granulado por rociado entonces para producir un producto seco con un contenido bajo de polvo.
