Abstract
Se describe un proceso para preparar productos a ser pasteurizados, por ejemplo, productos alimenticios, para asegurar una larga vida de anaquel sin afectar la calidad o las propiedades nutricionales, reologicas y organolépticas de los mismos. El proceso consiste en determinar el valor de coccion (Cg) del producto, midiendo el pH y el rH2 y en deducir el valor de pasteurizacion (P) correspondiente, con la ayuda principalmente de la curva de la figura, en medir enseguida la relacion (Aw) del agua libre al agua total contenida en el producto, y en determinar finalmente la curva de calentamiento de un tratamiento térmico que se aplica al producto con el fin de obtener simultáneamente, que cuando el valor de coccion sea alcanzando, el valor de pasteurizacion sea al menos alcanzado u de preferencia sobrepasado, y que el producto se encuentre en las condiciones fisicoquímicas correspondientes a la zona de inhibicion de los gérmenes de Clostridiumbotulinum.
