Abstract
La presente invención se refiere a una planta completamente nueva, y a un método relativo, para la producción de cerveza a partir de cualquier tipo de grano. El método se basa en la activación de fenómenos de cavitación hidrodinámica controlada durante todas las fases del proceso desde la maceración hasta la lupulización y, eventualmente, también después de la inoculación de la levadura. La invención ofrece una serie de ventajas con respecto a las técnicas tradicionales, por ejemplo, evitando el pre-prensado de las maltas o de los granos, aumentando la eficiencia de la sacarificación y de la extracción del almidón, evitando la fase de ebullición con la misma eficiencia de la lupulización. Otra ventaja consiste en la posibilidad de hacer que la concentración de gluten caiga en el producto final simplemente por medio de procesos hidráulicos controlados a través de la electromecánica, así como 15 prolongando eventualmente la fase de fermentación.
