Abstract

La presente invención se refiere a métodos para concentrar rápidamente una muestra alimenticia para detección eficiente de bacterias. Se usa un procedimiento de microfiltración seguido por centrifugación para concentrar las células con una enzima (por ejemplo, una proteasa) agregada en el inicio del proceso para facilitar micro-filtración más eficiente. Se encuentra la enzima para no tener efecto significativo en viabilidad celular.
