Abstract

La presente invención se refiere a un método para revestir con cubierta dura un centro comestible, un revestimiento de cobertura dura a base de sacarosa, y una confitura de cubierta dura que comprende un centro comestible con la misma. El revestimiento de cobertura dura a base de sacarosa comprende sacarosa y un colorante que contiene antocianina de rábano rojo de pH ajustado, es sustancialmente cristalino, y tiene una tonalidad roja o naranja descrita por medio de una coordenada h° de espacio de color CIELCH de aproximadamente 15° hasta aproximadamente 70°. En algunas modalidades, el revestimiento comprende además un colorante amarillo. Los colorantes deseablemente son de origen natural para proporcional alternativas a los colorantes sintéticos para colorear los revestimientos de las confiterías de cubierta dura en tonalidades de color rojo o naranja.
