Abstract

La presente invención se refiere a un método para la producción de un queso crema, el método comprende: proporcionar una composición láctea que contiene leche y crema; fermentar la composición láctea que contiene leche y crema para formar una mezcla de cuajadas y suero; formar una mezcla concentrada al remover por lo menos una porción acuosa de la mezcla de cuajadas y suero; formar un queso crema de la mezcla concentrada; el método comprende además obtener un retenido por ultrafiltración y/o microfiltración de una mezcla de leche descremada y un subproducto acuoso ácido de un procedimiento de fabricación de queso, y: a) complementar la composición láctea que contiene leche y queso con por lo menos una porción del retenido; y/o b) complementar la mezcla concentrada con por lo menos una porción del retenido.
