Abstract

La presente invención se refiere a un método para reducir la cantidad de grasas totales y saturados en rellenos de productos de confitería, particularmente, rellenos de productos de confitería basados en la dispersión continua de grasa a través de la lubricación de una premezcla seca y en polvo con bajo contenido de grasa por medio de aceite para lograr la reducción en el contenido de grasas totales y saturadas. Los rellenos se pueden usar para preparar obleas de capas múltiples y bizcochos emparedados.
