Abstract

En este documento se divulgan composiciones y métodos para quitar el sabor a un grano de pimienta, entero o molido, que minimizan la piperina, un alcaloide de origen natural que imparte acritud, que minimizan los aceites volátiles que imparten aroma, y que retienen la mayor parte de los micronutrientes metabólicos de origen natural. También se divulga un método que incluye poner en contacto un grano de pimienta con uno o más aceites produciendo de esta manera un grano de pimienta sin sabor.
