Abstract
La invención se refiere a un método y a un sistema 1000 para calentar directamente DE un producto lácteo enriquecido en proteínas P introduciendo vapor D en el producto lácteo P, adoptando el calentamiento directo DE la forma de un método de infusión IFV o de inyección UV. El problema abordado por la invención es el de crear un método del tipo en cuestión y un sistema para realizar el método que tienen el efecto de extender significativamente la vida útil en el proceso del método o en el sistema, y al hacerlo asegurar un contenido de proteínas de suero no desnaturalizadas en el producto lácteo enriquecido con proteínas tratado mayor que el obtenido en la técnica anterior. El problema se resuelve por medios de ingeniería de procesos en el sentido de que - el producto lácteo (P) que se precalienta y se mantiene a temperatura se enfría indirectamente (K) antes del calentamiento directo (DE) mediante una etapa de enfriamiento recuperativo desde la temperatura de precalentamiento (TVE) hasta una temperatura de enfriamiento (TK) con una diferencia de temperatura (???) en un intervalo de -268.15 °C a -263.15 °C (5 K(elvin) a 10 K (??? < (5 a 10) K)), - el calentamiento directo (DE) desde la temperatura de enfriamiento (TK) hasta la temperatura de pasteurización (THE) se controla mediante valores de ajuste de calentamiento directo que son per se conocidos, y - de acuerdo con la característica d), el producto lácteo (P) se enfría mediante enfriamiento rápido (K) desde la temperatura de pasteurización (THE) hasta una temperatura de salida (TA) necesariamente requerida.
