Abstract
La presente invención se refiere a la seguridad microbiana de los productos cárnicos. En particular, se proporcionan nuevos aditivos para la reducción efectiva de bacterias patógenas, como Escherichia coli (STEC) productoras de la toxina Shiga, sobre o en productos cárnicos. Los presentes inventores descubrieron que una combinación de un tensioactivo no iónico y ácido orgánico es particularmente efectiva en la reducción de estas y otras bacterias patógenas en productos cárnicos. Se descubrió que la adición de un agente espesante mejora aún más la efectividad de las composiciones para eliminar estas bacterias patógenas. La presente invención proporciona estas composiciones para la conservación de la carne, los métodos para tratar la carne con estas composiciones, los usos relacionados de estas composiciones, así como los productos cárnicos obtenidos en consecuencia.
