Abstract

The present disclosure is related to a production process consisting on a dark colored alcoholic beverage based on agave inulin hydrolysis, comprising a first stage of knowledge where the inulin hydrolysis and the fructose caramelization occurs using the Maillard reaction; thus obtaining the optimum conditions for the purposes of the present invention. Later, the milling is done; performing the same in a conventional way and during the later stages, the yeasts propagation is prepared. For this propagation, a conventional propagating tank with temperature and aeration control is used to place agave juice at about 8.5 to 12 degrees Brix, at a temperature of 32 to 35°C and yeasts (preferably Saccharomyces cerevisiae); wild agave yeasts; phosphate salts and fresh water.
