Abstract
La presente invención se refiere a un proceso para la preparación de una composición edulcorante cuyo método comprende: - proporcionar una composición líquida que comprende al menos un glicósido de esteviol; y - calentar dicha composición líquida al menos aproximadamente a 90°C durante al menos aproximadamente 15 minutos, en donde dicho calentamiento se lleva a cabo en presencia de: una sustancia que inhibe la nucleación y/o el crecimiento de los cristales de glicósido de esteviol; y/o en presencia de una sustancia que permite la conversión de al menos parte del glicósido de esteviol en la etapa de calentamiento en una sustancia que inhibe la nucleación y/o el crecimiento de los cristales de glicósido de esteviol, para preparar de este modo una composición edulcorante. La invención también se refiere a una composición edulcorante que es un líquido que comprende al menos un glicósido de esteviol y que es estable durante al menos aproximadamente 6 días.
