Abstract
Se describen métodos para obtener aceite del maíz, que comprenden moler granos de maíz para formar una harina, añadir agua a la harina para formar una suspensión e incubar la suspensión con a-amilasa durante entre aproximadamente 10 minutos y aproximadamente 180 minutos a una temperatura de entre aproximadamente 75° y aproximadamente 120 °C y a un pH de entre aproximadamente 3 y aproximadamente 7 para formar una mezcla, enfriar la mezcla a entre aproximadamente 15 °C y aproximadamente 40 °C y añadir una fuente de nitrógeno, glucoamilasa, levadura, proteasa ácida y enzimas degradadoras de polisacáridos de las paredes celulares para formar una cerveza que contenga etanol y aceite, en donde la cerveza tiene un pH de entre aproximadamente 3 y aproximadamente 7, y recuperar el aceite de la cerveza.
