Abstract

The inventive product consists in the manufacture of fillet made of fish and shrimp by-catch. The process consists in shredding the fish for obtaining a boneless and skinless flesh, the process being performed under a temperature of 20°C, a mixture of starch with water being added for obtaining a mass of plastic consistency (the mass may contain one or several of the following ingredients: garlic, onion, chilli, etc); the mass is subsequently moulded without being pressed, then it is packed and frozen to be preserved for the commercialization of the product. The fillet is manufactured in different forms, flavours and thicknesses, depending on the market requirements, thus we may establish that this product has not been manufactured and that it results from a by-catch product, maintaining its flavour and nutritional value, creating a product with a wide range of uses in the market.
