Abstract
La presente invención se refiere de manera general a composiciones que comprenden la fracción de proteosa peptona (PPf). En particular, la presente invención se refiere a un método para la producción de un extracto que comprende una fracción de proteína desmineralizada desprovista de ß-lactoglobulina y enriquecida en la PPf y a los usos de estos extractos, por ejemplo en un producto alimenticio, un complemento alimenticio, una composición nutritiva, farmacéutica y/o cosmética, por ejemplo como emulsificador o como agente de espumado. La fracción PPf de la presente invención se puede obtener mediante ajuste del pH de una dispersión de proteína globular nativa acuosa hasta aproximadamente 5.6 hasta 8.4, o hasta aproximadamente 3.5 hasta 5.0, calentar la dispersión de proteína nativa acuosa hasta aproximadamente 70-95ºC durante aproximadamente 10 segundos hasta 60 minutos, remover por lo menos una parte de los agregados sólidos de gran peso molecular formados con un diámetro de por lo menos 100nm desde la dispersión de proteína acuosa después del calentamiento y recolección de la fracción líquida remanente de la dispersión.
