Abstract

Se describe una centrífuga que es operativa en modos de baja velocidad y alta velocidad sucesivos que sirve para remover aceite de cocción de superficie de una corriente continua de productos alimenticios de bocadillos frágiles, en donde la remoción de aceite ocurre en el modo de alta velocidad y los productos son descargados de la centrífuga con energía cinética relativamente baja en el modo de baja velocidad.
