Abstract
La presente invención se dirige a mejorar el horno de cocción de alta velocidad convencional basado en una combinación de calentamiento por impacto de aire caliente y microondas proporcionando una variación espacial dependiente del tiempo en el impacto de aire neto y/o la energía de microondas neta aplicada el producto alimenticio en el horno, permitiendo así al horno a entregar una eficiencia de cocción óptima en comparación al horno de cocción de alta velocidad convencional. Además, bajo la presente invención, la eficiencia de cocción puede optimizarse adicionalmente dimensionando las boquillas para que el impacto de aire caliente tense los resoplidos o penachos de impacto, se someta a la restricción del espacio de la cámara de cocción del horno, y dimensionando la cámara de cocción del horno en múltiplos de enteros de la longitud de onda de la energía de microondas para corresponder a la carga de microondas.
