Abstract

Un método para producir cuajada o queso a partir de una composición láctea que comprende las siguientes etapas: - tratar con calor la composición láctea; - añadir extracto de levadura a la composición láctea tratada con calor antes o después del tratamiento con calor; - coagular la leche tratada con calor para formar un gel; - procesar el gel formado en una cuajada y separar el suero de la cuajada; y - opcionalmente hacer queso a partir de la cuajada.
