Abstract
La presente invencion se refiere a una barra nutricional u otra alimenticia la cual incluye, preferiblemente en niveles moderados a altos, peptidos en la forma de peptidos hidratados con alta actividad acuosa. Los peptidos tipicamente son ya sea proteinas intactas o proteinas hidrolizadas. La inclusion de peptidos en la forma de peptidos con alta actividad acuosa ayuda a prevenir la migracion de agua de los azucares a las proteinas lo cual podria resultar en otra forma en la formacion de azucares cristalinos duros y barras alimenticias las cuales son excesivamente duras. El aislado de proteina de suero y la proteina de suero hidrolizada son peptidos con alta actividad acuosa preferidos.
