Abstract
La presente invencion proporciona un proceso libre de suero para preparar queso mozzarella natural tipo cordon usando ingredientes lacteos secos. Este proceso permite la fabricacion de queso tipo cordon a partir de ingrediente no perecederos o estables en estantes tales como concentrado de proteina de leche seco y grasa de leche anhidra.
