Abstract
La presente invención se refiere a procedimiento de fabricación de una jalea de soja en embasalaje hermético, en la cual se calienta una suspensión acuosa de soja, agar-agar y azúcar y se la hace cuajar en masa, enfriándola, caracterizado por el hecho de que se preparara una suspensión acuosa que contiene del 3 al 10 por ciento en peso de sólidos de soja entera o desengrasada, del 0,2 al 0,7 por ciento en peso de agar-agar y del 0 al 12 por ciento en peso de sacarosa, se esteriliza la suspensión por calentamiento, se la pre-enfría hasta 40-48 grados C, se la acondiciona asépticamente en embalaje hermético a 40-48 grados C y se la deja cuajar en masa por enfriamiento dentro del embalaje.
