Abstract

The invention refers to the wine industry, in particular to a process for distillate ageing.The process, according to the invention, includes enrichment of the new distillate lots with oak wood components by fractional thermal maceration of distillates on oak wood, chopped up to 20 mm, in a quantity of 4…8 g/dm3 for each lot, at a temperature of 70…40°C, assembling of the enriched distillates and their ageing in the presence of oak staves. At the same time, the thermal maceration is carried out on the oak wood mixture obtained from the oak wood accumulated from the enrichment of 1…10 lots of previous distillates and from the fresh oak wood added for each lot.The result consists in a more complete utilization of the oak wood and in decreasing the labour input.
