Abstract

Inventia se refera la industria alimentara, in special la un produs biologic activ pe baza de vin rosu si la un procedeu de obtinere a acestuia. Produsul, conform inventiei, contine substante uscate ale vinului rosu si polizaharide in raport de (1,6...2,0) : 1 respectiv, totodata continutul componentului biologic activ al substantelor uscate ale vinului, resveratrolului, alcatuieste 0,13...0,25 g/kg. Procedeul, conform inventiei, include obtinerea vinului rosu care prevede zdrobirea si desciorchinarea strugurilor, tratarea termica a mustuielii la o temperatura de 70...80oC timp de 0,5...1 ore, fermentarea-macerarea la o temperatura de 32...34oC timp de 5...8 zile, separarea vinului prin scurgerea ravacului si presarea bostinei, purificarea si sulfitarea vinului, dupa care urmeaza concentrarea vinului obtinut la un continut reglabil al dioxidului de sulf de cel putin 10 mg/dm3 pana la un continut de substante uscate de 400...450 g/dm3, amestecarea vinului concentrat cu polizaharide conform calculului la 100 parti de masa de vin initial (4...8) parti de masa de polizaharide si uscarea prin sublimare, pulverizare sau in strat pseudofluidizat. Totodata in calitate de polizaharide se utilizeaza amidon modificat gonflabil si fibre alimentare de mere si/sau de sfecla de zahar, si/sau pectina, raportul dintre amidon si fibrele alimentare fiind de (0,1...0,5) : 1. Rezultatul consta in obtinerea unui produs cu un continut inalt de substante biologic active. ŕ
