Abstract

Invenţia se referă la industria vinicolă, în particular la un procedeu de fabricare a vinului de struguri.Procedeul, conform invenţiei, include două etape separate. Etapa întâi include frecarea bobiţelor de struguri proaspeţi până la obţinerea pireului, administrarea maielei de cultură pură de levuri în cantitate de 3...5%, uscarea prin sublimare în vacuum la o presiune de 25...26 Pa cu obţinerea unui praf cu umiditatea de 5% şi ambalarea ermetică, iar etapa a doua include diluarea prafului cu apă în raport respectiv de 1 : 6, până la conţinutul de substanţe uscate de 16%, fermentarea şi executarea ulterioară a operaţiunilor tehnologice în funcţie de tipul de vin fabricat.
