Abstract
The invention relates to the wine industry, namely to a process for manufacturing distillates from wine precipitates.The process, according to the invention, provides for the alcoholization of the liquid yeast precipitate with wine distillate or its “head” fraction to a strength of 16-25% vol., dilution with vinasse to a strength of 8-12% vol., maceration for 2-7 days and subsequent distillation of the mixture as such or with an addition of wine stock for distillation.
