Abstract

The invention relates to the food industry, namely to a process for producing mousse based on cottage cheese with high biological value.The process, according to the invention, comprises grating the cheese, mixing hydrated gelatin with sugar solution, mixing with grated cheese, adding red grape skin or apple, pear or quince pomace powder, adding vanilla sugar, homogenizing and foaming, after which the obtained mass is shaped, stabilized, packaged and stored.
