Abstract
Invenţia se referă la substanţe biologice şi procedee de tratare a vinurilor, în particular pentru îmbunătăţirea stabilităţii proteice a vinurilor albe şi roz, precum şi pentru prevenirea depunerii tartrului în vinurile albe, roz şi roşii.Tratarea vinului pentru stabilizarea lui faţă de tartraţi şi proteine constă în aceea că în vin se adaugă manoproteine extrase din pereţii celulari ai drojdiilor prin tratarea enzimatică cu ajutorul unui amestec de gluconaze β-1-3 şi β-1-6.Rezultatul invenţiei constă în sporirea efectului inhibitor asupra formării sărurilor tartrice şi proteinelor.
