Abstract

Invenţia se referă la industria alimentară şi anume la produsele sub formă de gem şi la procedeele de obţinere a acestora.Produsul sub formă de gem include masa de fructe, agent de îndulcire, pectină, acid citric şi apă. Noutatea constă în aceea că compoziţia produsului suplimentar include unui adaos proteic, totodată în calitate de adaos proteic se utilizează lapte uscat degresat sau izolat de proteină de soia. În calitate de masă de fructe se utilizează fructe fierte sau pireul de fructe. În calitate de agent de îndulcire se utilizează zahărul sau un agent de îndulcire care nu conţine hidrat de carbon.Procedeul de obţinere a acestui produs include obţinerea masei de fructe, amestecarea ei cu agent de îndulcire, încălzirea amestecului, introducerea pectinei concomitent cu adaosul proteic şi încălzirea repetată, în ambele cazuri amestecul fiind încălzit până la temperatura de 91…95°C.
