Abstract

The invention relates to the food industry, namely to a low-calorie mayonnaise.The mayonnaise, according to the invention, is obtained from a mixture of vegetable oils, sugar, edible salt, powdered milk, pectin, mustard powder, acetic acid, drinking water and optionally starch, at the same time it is used a mixture of vegetable oils selected from sunflower, linseed, rapeseed, corn, soybean oil and grape seeds, with a ratio of fatty polyunsaturated acids ω-6:ω-3 in the mixture of (5…10):1 respectively.
